This traditional kebab made with green chana, spinach, mint, coriander, green chillies and lemon juice is a quick and tasty starter that is loved by everyone. It can be eaten as a starter or snack. It is very easy to make and tastes wonderful too!

Spinach promotes gastrointestinal health and has antioxidants and anti-cancer properties. Spinach is an excellent source of vitamin K, vitamin A, manganese, folate, magnesium, iron, vitamin C, vitamin B2, calcium, potassium, and vitamin B6. In addition, it is a good source of omega-3 fatty acids. The vitamin K provided by spinach is important for maintaining bone health. Lutein, a carotenoid protective against eye diseases such as age-related macular degeneration and cataract, is found in green vegetables, especially spinach.
1 cup fresh hara chana (green chick peas) , soaked
1 tbsp mint leaves (phudina) , roughly chopped
1 tbsp coriander, roughly chopped
2 green chillies
1 cup spinach (palak) , roughly chopped
1 tsp roasted coriander powder
1/2 tsp roasted cumin seeds (jeera) powder
1/4 tsp garam masala
1/4 tsp chilli powder
salt to taste
1/4 tsp turmeric powder
2 tbsp rice flour
1 tsp lemon juice
oil for cooking
- Combine all the ingredients in a mixer and blend to a coarse mixture. Mix well.
- Divide the mixture into 8 to 10 equal portions and shape them into flat kebabs.
- Heat a non-stick tava and and cook a few kebabs at a time till they are golden brown in colour from both the sides.
- Serve hot with chutney, chat masala or tomato ketchup.
