This Maharashtrian bottle gourd raita is very quick and easy to make but still has a mind-blowing taste! The combination of curd, bottle guard and Indian spices is a perfect one! It is a very healthy raita. It can be eaten with chapatis, parathas, pulavs or biriyanis.
Bottle gourd acts as an alkaline mixture. Thus, when one is suffering from burning sensation in urinary passage due to high acidity in urine, one should have bottle gourd at least once in a day Bottle gourd is rich in fiber and essential minerals, iron and protein. Fibre helps in preventing constipation and other digestive disorders. Use in juiced form to treat stomach acidity, indigestion and ulcers. When one suffers from severe diarrhea, diabetes etc and is very thirsty, one should consume bottle gourd juice which is a medicine for excessive thirst.
2 cups chopped bottle Gourd
2 cups curds
2 tsp oil
a pinch of pepper powder
1 tsp mustard seeds
a pinch turmeric powder
a pinch asafoetida
1/4 tsp coriander-cumin seeds powder
1 tbsp roasted pea nut powder
chopped coriander for garnishing
salt to taste
- Heat the oil in a small pan and add the mustard seeds,asafoetida, turmeric powder, curry leaves and bottle gourd, mix well and saute for 2 minutes.
- Cover and cook till it becomes soft adding 2 cups of water, salt, coriander-cumin seeds powder on medium heat.
- Transfer in a serving bowl and keep aside till it becomes cold. Add the curd, peanut powder and coriander leaves.
- Serve with chapati or methi paratha.
