Amaranth Leaves Stir Fry

This is a very healthy curry which can be eaten with Indian breads. The unique flavour of Amaranth leaves combined with the Yellow Lentils and spices makes this a flavoursome and delectable dish. It is also easy and quick to make!

Highly packed with carbohydrates, proteins, vitamin K, folate, riboflavin, vitamin A, vitamin B6, and vitamin C, amaranth leaves boost energy in the body.  The high dietary fiber content (3 times that of wheat) in the greens improve digestive health and reduces constipation. It is easily digestible and good for both young ones and elders. Iron-rich (5 times that of wheat) red amaranth leaves promote coagulation and increase haemoglobin content and red blood cell counts.

Ingredients
3 cups chopped amaranth leaves
1/4 cup soaked yellow lentils
1 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp  roasted coriander  powder
salt to taste
1 tbsp oil
1/4 tsp mustard seeds
a few curry leaves
2 tsp lemon juice

Method 

  1. Heat the oil in a non-stick pan and add the mustard seeds , turmeric powder, curry leaves and yellow lentils and saute for a minutes.
  2. Add amaranth leaves and cook for 5 to 10 minutes stirring occasionally.
  3. Add salt, chilli powder, coriander and cumin seeds powder and mix and then cook for another two minutes.
  4. Serve hot with chapatis or rotis.
